With hands that understand the land and the passage of time, the  jimador  carves the plant until reaching the succulent heart of the agave. Cooking With absolute dedication, we cook the freshly harvested agave hearts in traditional masonry ovens or autoclaves. We apply precise heat to transform the starches into fermentable sugars and soften the fibers. This careful process allows us to achieve a tequila with a distinctive aromatic profile, deep flavor, and exceptional smoothness. Here, specialized machinery extracts the fibers to obtain the fermentable juices. This mechanical process breaks the agave fibers with precision, releasing the essential sugars that will bring the tequila to life during fermentation and distillation.
